The experience will focus on local, organic, farm to table practices as you participate in the many activities necessary to be self sufficient in food production in the gardens, the farm and the open kitchen of the beautiful 15th century hamlet of Monestevole, Umbria, Italy. The workshop will include courses on home made pasta, ravioli, gnocchi, pizza and bread; tomato, pesto, sage and zucchine preserves, local desserts, and the ancient tradition of "norcineria": butchering a pig and preparing salsicce, bistecche and costicciole.
